Nagumpisa ako magtrabaho sa Merced noong 2001 bilang isang janitor. Nagkataon na nagkulang ng baker, at nalaman ni Dr. Sevilla na marunong ako mag bake. Ginawa niya akong assistant hanggang sa namaster ko ang paggawa ng pineapple. Noong nagretiro ang partner ko, ako na ang nagpatuloy hanggang sa binago ko ang timpla, para mapaganda at mapalambot ang dough.
